 Key Responsibilities

As the Chef de Cuisine, you will have end-to-end responsibility for your venue’s success. Your leadership will be demonstrated through:

  • Supervising and managing the entire galley operation for your assigned venue, ensuring flawless execution of all events, food preparation, presentation, and service in line with Viking’s STAR Service Standards.
  • Acting as the vital link between your galley and the Main Galley, ensuring cohesive communication and operational alignment.
  • Frequently touring the dining room during service with the Head Waiter to engage with guests, ensure satisfaction, and proactively address any feedback.
  • Overseeing all culinary aspects including menu adherence, food quality control through random tastings, requisition accuracy, inventory management, and strict compliance with all Public Health Policies.
  • Providing strong, supportive leadership to a multicultural team—conducting daily briefings, performance reviews, training, and fostering a culture of recognition and excellence.
  • Managing administrative duties such as crew work schedules, payroll hour verification, and contributing to the achievement of culinary financial and quality KPIs.
  • Ensuring the readiness and immaculate condition of your galley for all public health inspections and maintaining the highest standards of safety, equipment care, and sanitation.

Qualifications

We seek a seasoned professional whose career reflects a commitment to premium culinary arts and leadership. You must possess:

  • A minimum of ten years of progressive culinary experience, including 3-4 years as a Chef de Cuisine or in an equivalent head chef role within a premium hospitality brand. A background in haute cuisine is a significant advantage.
  • Advanced culinary skills, creativity, and a guest-oriented approach to fine dining.
  • Fluent English communication skills are essential for leading your team, interpreting complex documents, and effectively managing guest interactions.
  • Proven experience in leading, motivating, and developing large, diverse multicultural teams in a high-pressure environment.
  • Exceptional operational and administrative skills, with comprehensive knowledge of public health, sanitation, and safety compliance.
  • The physical ability to handle items over 50 lbs daily and work a minimum of 11 hours per day, 7 days a week. Candidates must be at least 21 years old. Previous cruise ship experience is highly preferred.
