Key Responsibilities

  • Control and maintain a main galley section and its entire food production, following set recipes and dish guidelines while ensuring cleanliness during and after preparation.
  • Prepare daily electronic food requisitions by counterchecking merchandise in galley stores to maintain accurate inventory.
  • Undertake daily recipe reviews and maintain recipe folders for your assigned section, keeping them in immaculate condition.
  • Prepare food samples as requested by the Executive Chef or Outlet Chef, including show plates, tastings, and recipe trials.
  • Ensure the quality and presentation of food during preparation and service hours, maintaining the Viking STAR Service Standards.
  • Countercheck daily deliveries from the storeroom for accuracy and report any discrepancies to your supervisor.
  • Practice economical work habits, controlling food production to minimize waste.
  • Adhere to all Public Health Policies and Company Regulations, enforcing “clean as you go” work habits.

Qualifications

A minimum of one year or two contracts in a similar role within shipboard or premium hospitality is required, along with advanced culinary skills. Fluent English communication is essential to interpret menus and recipes clearly. Experience leading multicultural teams, flexibility, stress resistance, and a committed team player attitude are key. Guest‑focused, service‑oriented, with a positive personality, professional appearance, and impeccable hygiene standards. Must be at least 21 years old, physically able to handle up to 50 pounds on a daily basis, and capable of working at least eleven hours a day, seven days a week. Previous cruise industry experience is an advantage.
