Key Responsibilities
- Supervise and manage the entire galley of your assigned venue, ensuring smooth operations across all events, food preparation, presentation, and service, in line with Viking’s STAR Service Standards.
- Act as a key link between your galley and the main galley, coordinating workflows and maintaining consistent quality across all food outlets.
- Visit the venue frequently during service, checking tables and ensuring guests receive the best possible meal and service experience.
- Assist the Executive Chef with requisitions for catering equipment, countercheck food orders, and manage meal count figures.
- Ensure all menus, recipes, methods, and specifications are followed, conducting spot checks and tastings to maintain quality and presentation standards.
- Lead and support a multicultural team, conducting daily briefings, performance reviews, and training to maximize crew satisfaction, productivity, and retention.
- Maintain impeccable hygiene, sanitation, and safety standards, adhering to all Public Health Policies and Company Regulations.
- Manage food costs, waste, and inventory, ensuring economical work practices while never compromising on quality.
- Be prepared to step into the Executive Chef’s role temporarily when needed, and participate in cooking demonstrations as required.
Qualifications
- A minimum of four to five years of experience as a Chef de Cuisine or in a similar leadership role within a five‑star resort, hotel, or premium restaurant environment.
- Advanced culinary skills with a strong foundation in haute cuisine; formal culinary education is an advantage.
- Excellent English communication skills, both written and spoken, with the ability to lead multicultural teams.
- Proven ability to handle complex situations, including guest interactions and operational challenges.
- Strong financial acumen, with experience managing food costs, inventory, and waste.
- Guest‑focused, service‑oriented, with a positive personality and impeccable hygiene standards.
- Must be at least 21 years old, physically capable of handling up to 50 pounds daily, and able to work at least eleven hours a day, seven days a week.
- Previous cruise industry experience is an advantage.
